Planting elderberries
Best time to plant: early spring in Zones 3–7 (after last frost), or fall in Zones 7–9.
From bare-root cuttings (most common method):

Pruning elderberries is the single most high-impact management practice for home growers. Unpruned plants can produce less than half the berry yield of properly pruned plants after year 3.
Harvesting elderberries
American elderberries ripen in late summer, typically:

Harvest cues:
- All berries in the cluster turn dark purple-black
- Clusters bend downward with the weight of ripe berries
- Berries separate easily from stems when ripe

Making elderberry syrup
Elderberry syrup is the primary use for home-grown elderberries in the US.
Basic recipe (Penn State Extension):
- Combine 2 cups fresh elderberries (or 1 cup dried) with 3 cups water, 1 cinnamon stick, 5 whole cloves, and 1 tablespoon grated fresh ginger in a saucepan.
- Bring to a boil, reduce heat, and simmer 45 minutes until reduced by approximately half.
- Cool to room temperature. Strain through cheesecloth, pressing berries to extract all juice.
- Cool liquid further to below 110°F before adding honey (higher temperatures destroy raw honey’s beneficial compounds).
