Starting pepper plants from seed indoors gives you access to 50+ varieties unavailable at garden centers. Buying transplants saves 8–10 weeks of indoor growing time. For most US home gardeners, transplants are the faster and more reliable path to a good harvest.

The key dates are:

Plant peppers at the same depth they grew in the pot. Unlike tomatoes, pepper stems do not benefit from deep planting. They do not form roots along buried stems.

Watering pepper plants
Pepper plants need 1–2 inches of water per week. Inconsistent watering — alternating drought and flood — is the most common cause of blossom drop and calcium deficiency in US home gardens. Deep, steady watering prevents both problems.

Stage 2: At first flower

Common pepper plant problems
Blossom drop
Blossoms fall without setting fruit when temperatures exceed 90°F or drop below 55°F during flowering. This is the top yield complaint from US pepper growers.
Solutions: Shade cloth rated 30–40% blocks enough heat to keep plants productive through heat waves. Consistent moisture matters — water-stressed plants drop flowers even at moderate temperatures. Do not fertilize with high-nitrogen products during flowering; it diverts energy to leaves.
Sunscald
Sunscald appears as white or tan bleached patches on pepper fruit where the skin faces direct sun. It is most common in July and August across the southwestern and south-central US.

Aphids
Aphid colonies cluster on new growth and the undersides of leaves. They excrete sticky honeydew that promotes sooty mold. Aphid pressure is highest in warm, dry weather.

Fully ripe peppers (red, orange, yellow, or purple depending on variety) are sweeter, higher in antioxidants, and more flavorful. They take 2–4 additional weeks past the green harvest window.
For maximum production, do both. Harvest most fruit green throughout the season, but let a few fruit ripen fully for seed saving or fresh eating. This keeps the plant in active fruit production mode.
How to harvest
Cut peppers with garden scissors or a knife — do not pull them off by hand. Pulling stresses the branch and can crack stems or uproot shallow-rooted plants.
Harvest when fruit is firm, full-sized, and has reached the appropriate green stage for its variety. For hot peppers, color change to red, orange, or yellow indicates maximum heat development.
Storage
Fresh peppers last 1–2 weeks in the refrigerator. Freeze extra peppers by slicing and spreading on a sheet pan, then transferring to bags once frozen — no blanching required. Dried cayenne and other thin-walled hot peppers keep 1 year at room temperature.
Pepper plants and tomatoes
